Why things are never what they seem...

I like the idea of working at a vegetarian restaurant, but I guess somewhere along the years I've become a vego-nazi -- I demand nothing less than quality and creativity when it comes to vegetarian food. Vegetable stack? Boring! Veggie risotto? Next! Veggie Burger? You can't be serious!

I'm now beginning to understand how non-vegetarians have come to the conclusion that vegetarian food is simply to labour intensive. Since I work most nights I've taken to preparing a week's worth of food for my partner (and myself) to enjoy as needed so we don't have to resort to the nasty take-aways. This weeks menu: gazpacho, roasted eggplant & zucchini lasagna, vegetable tofu bake & a selection of two sauces for pasta; roasted eggplant-tomato and basil-zucchini. I like to take care of my partner is regards to food and feel guilty when he has to cook for himself. In other words, one has to know what to do with a vegetable to make inspirational food.

On another note, I just got the March issue of Vegetarian Times magazine in the post. The last issue I received was from November; I'm still wondering what happened to January and February. This is the magazine that inspires me to cook creatively, healthy and well. An international subscription is only $40 US ($52 AU).

Well worth it.
